Sorry that I’ve not been posting over the last few days … I had a bad ’bout with food poisoning, of all things!  UGH!  It wasn’t fun.  I’m feeling much better now, so I thought I’d go through some of my drafts and finish up a couple of them to keep the reviews coming.

Without even opening the bag, you can already smell the sweet Rosemary seeping through the wrapper. The playful balance of aromas makes this savory shortbread a perfect companion with an array of cheese and meat plates, or for a quick sweet snack, try adding a thin layer of strawberry jam.

I received one of these cookies in my November Love with Food Box.

Tea Suggestion:

Because of the sweet and savory flavors already present within these cookies, I wanted to choose a tea that would complement that.  Something that was neither too sweet nor too savory, and nothing that was too polarizing a flavor that might rob my palate of the joy of the flavors of this cookie.  I chose this amazing black tea from Joseph Wesley:  No. 03 Classic Chinese Black.  This tea is more sweet than savory, certainly, but, the sweetness of the tea helped to enhance the sweet, buttery notes of the cookie in a delightful way.  A delectable pairing.

What I Think:

Yum!  When I opened the package, I took a sniff and the rosemary is strong!

These shortbread cookies are a delicious balance of sweet and savory.  The shortbread is sweet and buttery tasting, with a delectable, delicate shortbread texture that I really like.  I’ve tried other cookies from this company before, and I can’t recall ever being disappointed by what I’ve tried from them, but this one might be the best one I’ve tried.  I love the contrast between the sweet and savory!

The rosemary and sea salt cut through the sweetness to keep the savory tones lingering into the aftertaste … these are just slightly more savory than sweet, but I like the way it works.

My Final Thoughts:  

A really delicious cookie and a nice alternative to the usual sweet shortbread cookie that one might enjoy during tea time.  I like the savory elements of this cookie.  If I must offer one complaint, then it would be that as I ate this cookie,  I did come across one single abrasive rosemary leaf that had not been crushed and obliterated, and while I do love the flavor of rosemary, I don’t love the prickly feel of the leaves when they get between my teeth.  But really, this is such a small issue for me and I enjoyed the cookie way too much to let that stop me from enjoying these in the future.

I love tomatoes.  I call them my favorite “fruit” … not so much because they are technically a fruit but because my favorite vegetable is carrots, and I would have a difficult time choosing between the two if they were both deemed vegetables.

???????????????????????????????This summer, my big Costco discovery was these Symphony tomatoes (I’ve also seen a smaller “symphony” package in Chuck’s Produce, which suggests to me that you might be able to find them elsewhere as well.)  They are an eye catching array of colorful cherry sized tomatoes – with colors such as chocolate brown, white (which looks like a “greenish” white), green, orange, and the familiar red.  Most of the tomatoes are roundish in shape, but some are “Roma” tomato shape.

To make my tomato salad, I start with a colander full of these tomatoes with all the blossoms removed and the tomatoes washed thoroughly.  Then I cut them.  Most of the round tomatoes I cut in half, but some of the larger round tomatoes I cut into fourths … basically, I cut the tomatoes into bite size pieces.

???????????????????????????????Then I season with Kosher salt and ground pepper.  If I happen to have it on hand, I will substitute the Kosher salt with a gourmet salt from Woody’s Gourmet.  (My personal favorite is the Black Truffle & Fresh Thyme Sea Salt)

Then I reach for my bottle of Smoky Bacon flavored Grapeseed Oil from Wildtree.  This is the MAGIC product in this salad, because it adds such a delightful flavor.  The bacon flavor is not an overpowering flavor, and I might like this even better if the bacon flavor was more pronounced (Bacon is a lot like chocolate in that more bacon = better.)  The bacon is best tasted when you taste the oil on it’s own, but, I still taste the bacon flavor when I make this tomato salad, and  love the way the smoky bacon and tomato flavors meld.

Note:  If you really want to focus on the bacon flavors, I suggest seasoning with plain Kosher salt rather than the gourmet stuff, as the extra seasoning in the gourmet sea salts tend to distract my palate.

I have fallen in love with Grapeseed Oil because I love the taste.  I used to be very devoted to olive oil, but, I like grapeseed oil even better, and I love the Wildtree brand (and not just because one of my dear friends sells the stuff!)   The taste of the grapeseed oil is not as heavy as the olive oil, and I find this especially desirable on a salad like my tomato salad where I want to taste the tomato.

I drizzle the grapeseed oil over the seasoned tomatoes, and then I follow that with a drizzle of vinegar.  I tried this salad first using this Champagne Mimosa Vinegar from Chapparal Gardens – LOVED it – but now I use balsamic vinegar and that is good too.  The Champagne vinegar is better … but it is also kind of pricey, Then again, so is a good balsamic vinegar, but since I always have balsamic vinegar on hand … well, you get the idea, right?

After I’ve seasoned and dressed the tomatoes, I toss the tomatoes well in the mixture to make sure that all the tomatoes get some vinegar and oil and seasoning on them.  And then I eat it.  YUM!

???????????????????????????????Yeah, I told you it’s easy.  So, if it’s a little too easy for you and my recipe is leaving you asking why I bothered to write this post … let me add this:  Tomatoes are very good for you!  They are an excellent source of antioxidants and help lower cholesterol.  They are also an excellent source of vitamin C, A, K and potassium.  And they’re practically calorie free!  Now, the dressing on this salad isn’t calorie or fat free, of course, but, I suggest go sparingly with the vinegar and oil anyway and let the tomatoes be the star of the show.

Tea Suggestion:

This granola bar has a lot of flavor on its own, so I didn’t want to choose something that might have a competitive flavor profile.  I chose this High Country black tea blend from Trail Lodge Tea, and it was an ideal choice.  The richness of the tea complimented the sweet, toasty flavors of the granola bar, and the earthy tones of the bar highlighted the tea’s earthier qualities.

What I Think:

When it come to granola bars, I typically prefer the softer variety over the crunchy.  This granola bar seems to fall somewhere in between the two … it’s not as hard as the commercially produced granola bars that you’ll readily find in the grocery stores, it isn’t pressed the way those bars seem to be.  You know what I’m talking about right?  It seems like the ingredients for those granola bars are compacted into a solid, brick-like form that is almost as hard as a brick.   That’s not the case with these bars, You can see all the ingredients, and they don’t appear to be quite as SMOOSHED together as the brick granola bars, but these DO have a certain toothy crunch to them that makes them similar to the crunchy granola bars.

But, what makes them crunchy are the chunks of nuts (I can taste the almonds and especially the pecans!  YUM!) and the toasted oats and sunflower seeds.  The texture is brought on naturally, not by over-processing.

My Final Thoughts:

I love that I can identify each ingredient that is listed in the above list.  I can taste the honey, and the cranberries and each of the spices too!  It’s really a warm and delicious tasting bar – definitely very “Harvest-y” … a perfect granola bar for this time of year (and for the Autumn Harvest themed Knoshbox!)  While I do generally prefer my granola bars to be slightly softer, I like that the crunchiness of this bar comes from the toasted textures of the ingredients.

Overall, this is an enjoyable, hunger-satiating granola bar … and one that I enjoyed enough that I might purchase it again.

When we began our quest to make scrumptious, healthy snacks out of seeds, we developed our original flavor, Pacific Sea Salt. Tea Suggestion:

With salty snacks like this, I want iced tea!  I brewed some of this Organic Korakundah Green Tea from Butiki Teas and served it iced with these Somersaults, and it was a great pairing.  The slightly smoky, sweet yet bitter taste of the green tea offered a nice contrast to the nutty crunch of these salty snacks.

What I Think:

I received a small package (1 ounce) of the Pacific Sea Salt Somersaults in my Goodies Box for September.  I was pretty certain I’d enjoy them, as I have loved the other flavors that I’ve tried of this snack.

In comparison, though, this one is just a little bland.  It is basically like eating roasted, salted sunflower seed kernels … only more substantial.  They have that very satisfying crunch and substance to them, and I find that this small package made for a nice between meal snack that kept me satiated until dinnertime.

They’re salty, but not too salty.  Tasty … nutty.  I like them, and they seem to satisfy that empty feeling between meals better than something less healthy like potato chips.

My Final Thoughts: 

If I were to shop for snacks, I might choose Somersaults because they’re healthier than something like potato chips, and I’d feel better about my daughter snacking on these.  For my daughter, I’d probably select this flavor because I think that the salty pepper would be a little too peppery for her taste… but for me, this is probably not the flavor that I’d select.  I enjoyed them, sure, but after sampling the salty pepper or the cinnamon crunch Somersaults, these Pacific Sea Salt Somersaults left me wanting a little bit more flavor.

Madagascar Vanilla Caramel:

Handmade caramels made with only real butter and heavy whipping cream. We add in just a little salt , a plump madagascar vanilla bean and cook everything to just the right temperature. We then hand wrap each soft creamy and rich caramel.

Tea Suggestion:

With these caramels, I chose this Royal Gold Yunnan Needle from Zhi Tea, and I must say that it is the perfect pairing!  The tea has delicious caramel-y undertones to it which accent the caramels in a way that the burnt-sugar flavors are amplified (and I like that), and there is just a hint of smokiness to it.  A wonderful treat – this tea and these caramels!

What I Think:

These are not the first treats that I’ve tried from CC Made – thanks to the now-defunct Foodzie box, I had the opportunity to also try a couple of the Caramel corns from CC Made and I loved those.  So, I knew I was entering into somewhat familiar and very tasty territory with these two caramels that I received in my Petit Amuse Sampler Box last month.

The box contained one of each of the following flavors:  Himalayan Pink Sea Salt Caramel and Madagascar Vanilla Caramel.  YUM!  My mouth waters just from typing out the names of these … and I haven’t even begun tasting yet!

These have to be the softest, creamiest caramel confections I’ve had.  These are almost like caramel sauce, they’re so soft and gooey!  I started with the Madagascar Vanilla Caramel because I LOVE salted caramels (I love vanilla caramels too, but, there’s a special place in my heart for salted caramel), and I wanted to save the best for last.

These are incredibly soft.  Chewy … yes, well, every caramel I’ve ever tried was chewy, but this Madagascar Vanilla Caramel literally melted in my mouth, I didn’t really have much of a chance to chew.

It was silky smooth – no grit, no sugar crystals, just smooth, rich caramel with a delicious vanilla overtone.  There is something a little more to it … almost a smoky flavor that I notice now in the aftertaste.  Very interesting.  Then again, that COULD be the tea that I’m drinking along with these, I can’t say for sure, but, I really am enjoying this aftertaste, almost as much as I enjoyed the confection!

Now for the Himalayan Pink Sea Salt Caramel … Mmmm… yes, I think that the smoky note (ever so slight) is coming from the caramel, it’s like a burnt-sugar taste.  And it’s very enjoyable.  Of course, this is further accented by this tea – this Royal Gold Yunnan Needle – because it has an undercurrent of burnt-sugar caramel flavor to it … but the caramel has it too.

I don’t notice much of a sea salt taste nor do I notice the texture of it.  Then again, this caramel, just like the Madagascar Vanilla before it – melted in my mouth before I had much chance to really chew it.  I did notice that this caramel was a little stickier than the first.  Both were really delicious though, but I think my favorite was the Himalayan Sea Salt … even though I don’t taste much from the salt, I do taste more of that smoky, burnt sugar taste and I really like that.

My Final Thoughts:

I love caramel as I’ve mentioned more than once.  And these caramels were spectacular.  I love how soft they were – but they were almost too soft.  They didn’t allow me to enjoy the chewy texture of caramel because they became almost the consistency of silky caramel sauce when the caramel hit the tongue.   But they were incredibly decadent, and sometimes, that craving for decadent creaminess outweighs the need for chewy texture in a caramel … and in those cases, this is the caramel you’ll want!

Tea Suggestion:

With these buttery, salty snacks I recommend iced tea!  These would be great with hot tea as well, but they have that snack-y kind of appeal that just screams iced tea to me.  Today I’m sipping on some cold-brewed tea from 52Teas newest brand:  Southern Boy Teas, and I’m drinking the RadioactiviTea “flavor” – which isn’t really a flavor at all, but pure, CTC Assam teas.  The natural fruity notes provide a lovely sweetness which is a very enjoyable contrast to the salty, buttery goodness of these Halfpops.

What I Think:

The half popped kernels have always been a “secret” pleasure of mine, I would always dig for them at the bottom of the bowl… but I didn’t realize that other people loved them as much as I did … enough to create a whole new snack around them!

These kind of taste a bit like Corn Nuts, only they’re better, because they don’t taste overly processed.  The Corn Nuts, while enjoyable because they’re crunchy and have a tasty corn flavor, have always tasted just a bit artificial to me … very junk food/corn chip like to me.  But these taste more like popcorn.  Oh sure, I’m sure they still qualify as “junk food” with all the salt and buttery flavoring, but they don’t taste overly processed.  They have that natural crunch and sweet corn taste of real popcorn, because that’s what it is.  These aren’t uniformly shaped and processed.  They look like what’s at the bottom of the popcorn bowl, only… there’s more of them!

I was kind of hoping for the cheese flavored Halfpops to be in the box, mostly because I figured it’d be something different from what IS at the bottom of my popcorn bowl, but, it only took one taste of these buttery, yummy, salted Halfpops to not feel like I’m missing out on the cheese flavor.  These are really awesome.   Lots of buttery goodness and just enough salt… just the way I like my popcorn.  (Although recently, I’ve taken to adding a sprinkling of Bourbon Smoked Paprika on top of my popcorn!)

Hey, Halfpops, if you’re reading this, you should team up with Bourbon Barrel Foods and make a Bourbon Smoked Paprika flavored Halfpops.  Or… a Bacon flavored Halfpops would be good too.

My Final Thoughts:

I really like these.  I was kind of underwhelmed with the idea of them being in the box at first, but, I’m glad that Foodzie included them.  They are sure to satisfy that crunchy snack craving when you get them:  they are a little sweet from the corn and the butter, salty, and irresistibly good.   My only real complaint is that there are a lot of “empty” shells in the package – the hulls that have shed off of the Halfpops.  A minor irritation, really, not a big deal, but something I think is worth mentioning.  I see that these are available at my local Whole Foods, I think I’ll have to look for them the next time I’m shopping!

Tea Suggestion:

These yummy treats do evoke thoughts of summer, and therefore, I suggest iced tea all the way!   One tea that I’ve been enjoying a lot lately and tastes really good with this taffy is this Organic Thai Iced Tea from Arbor Teas, brewed at double strength and then served chilled with a little bit of ginger ale instead of sweetened condensed milk (as I mentioned toward the end of the linked review).  YUM!  The creamy vanilla notes of the tea, as well as the hint of anise really seems to go well with the peanut-y goodness of these salty taffies.  (Taffies?  Taffys?) Delicious.

What I Think:

I like peanut butter.  I don’t really love the stuff, but I like it ok.  I’d prefer almond butter or hazelnut butter (and I’d prefer it to be from Justin’s) but I enjoy peanut butter now and again, although I don’t know that it would be a regular staple in my kitchen if I were single.  I just don’t eat it often enough to do that.  But my husband and daughter love the stuff, so I keep it on hand.

And if I were shopping for salt water taffy, I don’t know that I would have purchased this “Salty Peanut.”  Just a quick look at The Salty Road taffy collection, bergamot would have been my first choice.  Then, again, the salty caramel apple sounds divine, as does the vanilla.  All three of the other flavors sound like something I’d choose before I’d choose Salty Peanut.

And because of that, I can’t help but feel a little glad that Foodzie did the choosing for me this time, because I’m REALLY glad I got to try this flavor.  It’s really outstanding!  It has a distinct peanut-butter-y kind of taste to it, and just as the sweetness begins to swell around on the palate, I taste the sea salt start to cut through it.  As I eat these, I can really taste the “sea in the air” and feel the “wind in my hair” that Emily talks about in the Boardwalk Box video on Joyus!  These tasty treats seem to embody the spirit of the Boardwalk Box.

The texture is smooth and creamy, but every once in a while, I come across a little crunch from the sea salt.  In the aforementioned video, it is suggested that these have a milkshake-like flavor to them, and I get that.  They are so creamy, soft, and fluffy!  I love how soft these are … I’ve had gourmet salt water taffy before, and even though the gourmet taffy is quite a bit softer than a typical supermarket sweets aisle taffy, these are even softer!  It’s like they were freshly pulled, with that marshmallow-y soft smooshiness to them.  Yes, smooshiness.  It’s a word.  I just made it up!

My Final Thoughts:

These are easily the best salt water taffies I’ve ever tried.  And, yes, I’ve had some locally made salt water taffy – and loved it! – but this is even better.  This tastes and feels fresher than even that locally-made stuff, which had been made THAT day.  This stuff is AWESOME!

We love the act of opening a box of Valerie’s toffees, all trussed up with beautiful silk ribbon; it’s almost like you’re undressing it. Inside, handmade rich, buttery toffee, enveloped in dark Valrhona chocolate, beckons. Crunchy, organic California almonds stud the toffee, which is made in small batches, and the whole thing is finished off with fleur de sel for a lingering savory finish.

Tea Suggestion:

While these are delicious enough on their own, everything goes better with a spot of tea!  I chose to pair these toffees with Samovar from Kusmi Tea.  The smoky notes of the tea added a lovely depth to the toffee, and brought a savory quality to the overall experience.

What I Think:

In the Valentine’s Box from Foodzie, I received an elegant little box tied up with a pretty pink ribbon that contained two of Valerie Confections’ Dark Chocolate Toffee squares:  one topped with a whole, roasted almond and one encrusted with a sprinkling of sea salt.

The toffee inside is crunchy and hard, much like what you’d experience when biting in a Heath bar.  But this is WAY better than a Heath!  It is buttery and sweet with a delightful nutty flavor in the background.  What really surprised me is just how buttery these are.  I could taste the sweet, creamy butter with which these were made.

Each piece is enrobed in a thin coating of bittersweet dark chocolate, which offers a pleasing contrast to the sweetness of the toffee.  What I really like about these is how the different toppings change the flavor of the confection, even though inside each square is the same toffee.  The almond topped square brought out the nutty tones to the toffee; while the salt encrusted square brought a compelling roundness to the confection – providing sweet, salty and bitter flavors for the palate to enjoy.

My Final Thoughts:

An immensely enjoyable set of toffees … tasting this treat made me happy that I chose the Valentine’s Box for February!  These were absolutely delicious!

Positively addictive, these chewy caramels are made from coconut palm sugar, then topped with puffed brown rice. The decadent, rich caramel is dipped in bittersweet chocolate, and finished with a delicate dusting of sea salt. It’s no wonder these handmade bars have a cult following.

Tea Suggestion:

As with most chocolate-y, caramel-y confections, I recommend selecting a black tea to enjoy with this treat.  I selected this Bolivian Whole Leaf Black Tea from KTeas to drink while tasting this candy, and it was the perfect choice.  The deep caramel-y flavors of the tea complemented the sweetness of the candy without adding a more cloying taste to the palate.  Instead, it actually seemed to refresh and cleanse the palate.  Delightful!

What I Think:

WOW!

Let me say that again:  WOW!

These are amazing!  I’m not at all surprised to see that these were voted the Best Caramels at San Francisco’s Chocolate Salon.  (As an aside, I think that I really need to attend this Chocolate Salon)

What really surprised me with my first bite was the crispy puffed brown rice.  Having not read the description of these caramels before taking a bite, it was a pleasant surprise to discover the crackly crunch of rice “crispies” in this confection.

The bittersweet chocolate is just a thin shell of chocolate, but, it provides the perfect ratio of bitterness to the candy.  I really like the balance of tastes.  Yes, it is sweet, but it is also salty with just a hint of bitter from that chocolate.  One confection tastes neither too sweet or salty or bitter, but, it is sweet enough to satisfy the sweet tooth after just one confection.

The caramel is made from coconut palm sugar, and while I don’t taste a lot of coconut influence in the overall confection, I can taste a hint of coconut there.  The texture of the caramel is slightly hard to the tooth when I first bite into the candy, but it quickly gives way and becomes chewy and softer.

I think what I’m enjoying most about these chocolates is that they possess not only a delicious balance of contrasting flavors but also contrasting textures, from the snap of the chocolate to the chewy caramel and crispy rice and crunch of the salt on top … these little squares are packed full of flavor.

My Final Thoughts:

These caramels are really delicious.  I don’t know that I like them better than my beloved Fran’s Caramels, but Kika certainly could give Fran a run for her money!  I like that this isn’t made from corn syrup (yeah, I know that they say “sugar is sugar” but I like it when I find a candy company that uses alternative sweeteners).  Not only does my sweet tooth approve, but somehow, I’m able to rationalize that these are better for me than the average candy bar, and I appreciate that.

For lovers of chocolate with a crunch. The cocoa nibs add texture to the 63% cocoa bar’s naturally smooth flavor. A light dusting of sea salt intensifies the complex flavors of the cocoa.

Each bite has a satisfyingly sweet & savory experience to be remembered.

Tea Suggestion:

Personally, I prefer black tea with chocolate, as the deep flavors of the tea complement the flavors of the chocolate so well.  With this particular chocolate bar, I found the dimension of flavors to be so pleasing I wanted something fairly mild from my black tea choice, so I chose this Neela from The Tao of Tea.  It has a pleasant sweetness and a mellow character, and it highlights the amazing complexity of this chocolate bar quite nicely.

What I Think:

This is one of those chocolate bars that is so incredibly tasty that it’s difficult to stop eating it.  I broke off a portion of the bar to savor, and the next thing I knew, I looked down to see not only that small portion (about 1/8th of the bar) had vanished, but, HALF of the bar was gone!

I’ve never really paid much attention to the cacao percentages on chocolate as far as determining what percentage level is most satisfying to my palate, but, based upon this experience, I am thinking that my personal preference is in the 60-65% range.  Dark, with lovely bittersweet tones, but not so dark as to overpower some of the more delicate notes within the chocolate.

I am noting some fantastic fruit notes in this bar.  Sweet and luscious, but the added sea salt offsets some of that sweetness so that it does not become cloying.  The sea salt also adds a very enjoyable crunch to the bar (as does the cacao nibs).  It has a deep, roasted flavor to it and I like the way the savory roasted tones and the sweet fruit notes meld together to bring a delectable sweet yet savory contrast.

My Final Thoughts:

Truly a beautiful chocolate experience – this chocolate bar is one that I think all lovers of chocolate should try.
